    Default Another recipe thread full of yummy goodness

    Chicken Cordon Bleu

    ingredients/utensils:
    1. boneless skinless chicken breast halfs
    2. 1 container of whipped cream cheese
    3. pkg mozzerella cheese
    4. pkg of fresh parmesan cheese
    5. container of italian style bread crumbs
    6.2 eggs
    7. thin deli sliced honey ham
    8toothpicks
    9. bakingpan
    10. plastic wrap
    11. meat tenderizer(meat mallet looks like a hammer)

    1. take the chicken breast, lay each one in between 2 peices of plastic wrap( if you don't you will have chicken juiice splattering on you, not cool); now take the meat mallet and beat chicken breast until thin and flat, about inch-inch and 1/2 thickness
    2.lay out breasts smooth side down, lay a peice of ham on top of chicken cut slightly smaller than chicken
    3. spread a thin layer of cream cheese on top of ham
    4. sprinkle a bit of mozzerella cheese and parmesan on top of cream cheese( not too much or it wont roll up
    5.now take the sides of the chicken and fold them in, then take the smallest part of the top of the chicken and begin to roll holding in sides as you are rolling, secure with tooth pics
    6. next take the eggs in small bowl whip them. Dip each breast into the egg then either roll in breadcrumbs or place them in a freezer bag and shake them in the bag usually works better that way
    7. after that place the chicken breasts on a baking pan and put them in a preheated oven at 350 degrees
    8. cook for 35- 45 minutes
    9. when ready remove tooth pics and enjoy!

    Starbucks Mocha Frappuccino

    1/2 cup fresh espresso
    2 1/2 cups lowfat milk (2 percent)
    1/4 cup granulated sugar
    1 tablespoon dry pectin*

    Combine all of the ingredients in a pitcher or covered container. Stir or shake until sugar is dissolved. Chill and serve cold. (http://www.topsecretrecipes.com)
    Makes 24 ounces.

    Tidbits

    To make the "Mocha" variety:
    Add a pinch (1/16 teaspoon) of cocoa powder to the mixture before combining.

    To fake espresso with a drip coffee maker and standard grind of coffee:
    Use 1/3 cup ground coffee and 1 cup of water.
    Brew once then run coffee through machine again, same grounds.
    Makes about 1/2 cup fresh espresso to use in the above recipe.
    Run a pot of water through machine, without grounds, to clean.

    *This is a natural thickener found in fruits that is used for canning. You can find it in the supermarket near the canning supplies. It is used in this recipe to make the drink thicker and creamier, and can be found in the original recipe. It does not add to the flavor and can be excluded if you don't care so much about duplicating the texture of the real thing.

    Baked Potato Casserole:
    ingredients: 1 cup of butter or margerine,1 container sour cream, 1 bunch of chives, 1 pkg of bacon, 2 tablespoons of ranch salad dressing, 1 bag of red new potatoes, 1 bag cheddar cheese

    1. wash and peel potatoes
    2. chop chives into small peices( easiest way use kitchen scissors)
    3. cook potatoes in large pot until cooked but still have firmness to them
    4. cook bacon on stove or microwave, pat off grease with paper towel, crumble and set aside
    5.take butter, put in microwave safe bowl for about 30 sec or until melted ( this way when you stir potatoes wont get all mushy)
    6. place potatoes in large baking dish, pour butter and mix with the sour cream and ranch
    7.Sprinkle with chives, bacon, and cheddar cheese
    8. put in preheated oven 10-15 minutes or until cheese is melted

    ( note: If you suffer from cholesteral or heart problems clogged arteries etc. this may not be the best dish for you, it is very fattening, lots of calories and is not for those who want to loose weight)

    Erm.... let me try to scare up my recipe for brown sugar pie. Within a week or two I'll have it, tops (yikes! I want to make that for a big dinner I'm hosting at my place in under two weeks... I'd better have it by then...)

    easy, and delicious.

    Broccoli Slaw Ramen Salad

    You need:
    1 package of broccoli slaw
    2 packages of oriental flavor ramen noodles
    3/4 cup vinegar
    1/2 cup sugar
    1/2 cup oil

    1. Put slaw in a large-ish bowl.
    2. Crumble up ramen noodles into small pieces and add them to the bowl.
    3. Mix it up.
    4. Combine all other ingredients in another bowl. Include the flavor packets from the ramen in this.
    5. Mix that up.
    6. Pour the second mixture over the slaw and ramen.
    7. Put in the fridge for at least 20 minutes.
    8. Eat.

    This makes probably enough for four people to have a good sized serving, but i usually like to eat it all myself. You can add different things as well, some people add sunflower seeds, or almond slivers, or things like that. Whatever you want in your salad. This is one of those things that gets better with age, imo. Though, not too much age. It's really good the next day, it sort of marinates in the sauce stuff. It's a balance, eat it soon if you want it to be a crisper salad, let it sit if you don't care about the crispness and want it to be more marinated. ~shrug~ i love the stuff and it's really cheap and easy to make.

    Fried banannas

    This is yummy sweet breakfast. Its great for when your bannanas start to get old and mushy (and for safety sake, I'm refering to the FRUIT...so don't any girls get any ideas of things to guys you don't want around anymore).

    First chop up your bananna(s).
    Then melt a bunch of butter in a frying pan.
    Next, mix in some brown sugar until you have nice watery surupy consistency.
    Finally, mix in the chopped banannas and stir them around a bit.

    Let cool, serve, and enjoy.

    ...and don't eat too much or you'll prolly get a stomach ache.

    Cucumber salad:

    1. cucumbers
    2. vinegar
    3. pepper
    4. mayo or miracle whip

    1. clean, peel and cut cucumbers
    2.in a BOWL mix about 1 cup mayo or miracle whip, about 1/4 cup vinegar, sprinkle with a couple of TBS pepper pretty much add enough to taste
    if its too sour add more mayo should be dressing thickness, also makes good salad dressing when cucumbers run out

    Poverty Stew

    heh.


    -beef for stew, or cubed steak that you got on special at the grocery store. (as much as you can afford)
    -dried mixed beans (about 1/2 cup)
    -rice (about 1/2 cup)
    -2 celery sticks
    -2 carrots
    -1 Onion
    -1 head of garlic, or lots of dried garlic powder. (to taste)
    -any other veggies you like in soup, potatoes, i'm not sure what other veggies you can put in soup. whatever you want/have, basically

    Start soaking the beans the night before. Or else start boiling them about half an hour-an hour before you start making the stew.

    Brown your meat in a big-ass pot. With garlic. Or without. Your choice. Once the meat is browned, you can start adding in the water. Fill the pot about halfway with water.

    Chop up alll your veggies. mmm. veggies good. throw those in the pot. And your pre-soaked beans, adn your rice. Barley too if you hapen to have it lying around. The more the merrier. Add in your garlic (if you didn't already have it) and whatever spices you like/have. I'm fond of basil and oregano myself, some pepper, but you can basically add anything you think will taste good with beef, beef bouillion is always a good addition, but see the note below, since bouillion is essentially salt with some spices.

    Let this simmer for an hour or two. Then add your salt to taste. If you add the salt before the beans are cooked, the beans will end up hard and tough and not delicious. If you fancy dumplings, put those in! mmm. dumplings.

    Put into a bowl. A plate is not good to eat soup/stew in. Eat. Probably with a fork, depending on your water-rice/bean ratio. This is a thick, hearty stew, and it will last pretty well if you freeze it, so make a huge pot, and eat it all week, or freeze it or something. That's why i call it "poverty" stew. 'cause if you are poor, this stuff will keep you alive and well. Spend all your money on the ingredients for this stew, and then make it last for a week or so. mmmm mmmm good.

    Talking delicious carrot bars

    This is a recipe from my mother-in-law for Carrot Bars. They are like carrot cake but very smooth (not chunky) because they are made with baby-food carrots. They are super yummy.

    We usually make a double batch and spread it into a jelly roll pan.

    1 cup sugar
    1 cup flour
    1 teaspoon cinnamon
    1 teaspoon salt
    1 teaspoon baking soda
    2/3 cups salad oil
    2 eggs
    1 large jar of baby food carrots
    (we are never really sure what a 'large' jar is, do what you think is best)

    mix together and bake at 350 for 30 minutes

    use cream cheese frosting

    1 8oz cream cheese, softened
    3 1/2 cups powdered sugar
    1/2 cup butter
    2 teaspoons vanilla

    (even if you double the first recipe, you don't have to double this one,
    it just depends on how much frosting you like)

    Default Peanut Butter Rice Krispie Treats

    A twist (and an improvement, IMO) on ye old rice krispie treats...

    1 cup sugar
    1 cup peanut butter
    1 cup corn syrup
    6 cup Rice Krispies

    Combine sugar and corn syrup in 3 quart pan. Cook over medium heat stirring frequently until mixture begins to bubble. Remove from heat. Stir in peanut butter. Add Rice Krispies stirring until well blended. Press mixture into a 13x9 non stick pan. Let cool, cut, and eat.

    Default Dump Cake

    Preheat oven to 350°

    1 Yellow Cake Mix (dry, do not mix)
    1 Can Pinapple (Chunks or Tid-bits, Drained)
    1 Can Cherry Pie Filling
    1 Cup Pecans (optional)
    1 Cup Coconut (optional)
    2 Sticks Oleo (sliced)

    Slice Oleo into enough pieces to cover the bottom of a 9x13 cake pan.

    Dump the rest of the ingredients in and spread around evenly, it doesn't really matter what order you put them in, except the coconut, it doesn't do well on the very top of everything else. You can vary the fruits (and the amount of fruit used) to taste.


    Bake for 30-40 minutes.


    Best served warm with Vanilla Ice Cream or Whipped Cream


    Star and Malcor, and maybe Lakai, may well remember this treat from High school.
